- DO YOU USE WATER, VINEGAR OR HEAT?
No! We do not use any water, vinegar or heat in any of our krauts.
WATER: We only use water when we make brined vegetables (ex: cucumber pickles). We do not add water to any of our krauts. All the liquid in each jar of kraut comes from the vegetables themselves. When we add salt to our krauts, it draws the moisture out of the vegetables, creating delicious brine (undiluted!).
VINEGAR: The acidic flavor you taste is not from vinegar, it is actually from the lactic acid produced through the fermentation process. Hence, this type of fermentation is called "lactic acid fermentation".
HEAT: We NEVER use heat with any of our products. All our products are raw and full of probiotic cultures. If we were to pasteurize our products or use heat to seal our jars, we would kill all the beneficial bacteria. We keep our products raw and free from heat in order to bring you a delicious, live, probiotic food.
- WHAT IS FERMENTATION?
Fermentation is the chemical breakdown of a substance by bacteria, yeast or other microorganisms. Here at Blue Bus, we are working with bacteria to produce lactic acid, which sours the vegetables, lowers the pH and ultimately preserves our products.
- WHY ARE FERMENTED FOODS GOOD FOR ME?
Fermented foods are best known as transporters of beneficial bacteria, otherwise known as probiotics. Our gut should ideally have a healthy population of these beneficial bacteria, and eating naturally fermented foods is a great way to replenish and help maintain that population. These bacteria aid in overall digestion and elimination, therefor acting also as a natural cleanser. Having a healthy population of gut bacteria also helps you absorb the nutrients from all the other food you eat. Fermented foods are high in vitamin C, acting as a natural immune booster. And, they're delicious! We believe that good food is one of the most potent forms of medicine.
- HOW LONG DO YOUR PRODUCTS FERMENT?
We like to give our products plenty of time to sit, ferment and develop a symphony of flavors. We try our ferments often, and package them when they are ready. Generally, we let our products ferment anywhere from 3 weeks to 5 months (and beyond, for specific goodies!). Most of our products ferment for 3-6 weeks.
- ARE YOUR PRODUCTS RAW, VEGAN AND GLUTEN FREE?
Yes! All our products are raw, vegan and gluten free. Period.
- MY BLUE BUS JAR IS BUBBLING OVER!
It's okay! Have no fear. Your kraut is still entirely fine to eat, as long as it doesn't look or smell off. The reason your jar is overflowing is because it has started re-fermenting. This is because at some point, it became too warm. It could have happened at some point during transportation, or it could have been left out of the fridge upon purchasing. Yes, put your kraut in the fridge, even before opening! This slows fermentation to a virtual stop, keeping your kraut delicious and crunchy, and not bubbling over.
- DO I NEED TO REFRIGERATE MY BLUE BUS PRODUCTS?

- I DIDN'T HEAR A "POP" WHEN I OPENED MY BLUE BUS JAR. IS SOMETHING WRONG?
Nothing is wrong. Because we do not use heat, we do not seal our lids onto our jars. We pack each jar by hand, and tightly screw each lid on. Despite the fact that you do not hear a POP, your jar is totally safe to eat.
- HOW LONG ARE BLUE BUS PRODUCTS GOOD FOR?
We print a "Best By" date on top of each jar. We believe our krauts to be best by that date- best flavor, texture and appearance.
